Butcher-Block Countertops

I am considering installing butcher-block countertops in our kitchen. Would a plywood core sheathed in maple work, or must I have a full thickness butcher block top?

: You are very likely to experience problems of differential shrinkage between the plywood and the solid maple if the maple is thicker than about three millimeters.
