Building Workbenches with MDF?

I have a couple of questions about making a workbench with a laminated top of MDF. Would it stay stable and flat? How well would the dog holes maintain their shape & compared to end jointed maple, spruce?

Michael Dresdner: It’s not as good as maple, though it is tougher than spruce. I have a seven-foot by four-foot assembly table made of 2-1/2″ of MDF laminated to 3/4″ shop ply. The whole thing sports a polyurethane finish, and is heavy, durable, and stable. Still, given the choice, I’d go with maple.
